My first week back to menu planning went well! I followed it nearly to a T and tried a few new recipes along the way…
Monday’s Baked Ziti and salad. Not a new recipe, but always a hit.
Tuesday’s Pasta Salad we had with rotisserie chicken. This one was new. I was not a fan of the raw zucchini, however it did get better after it sat overnight, but I LOVED the homemade Sherry Shallot Vinaigrette! I added chopped mozzarella which turned out to be really good.
Thursday’s leftover night :) Perfect planning because James ended up working late that night. I put the extra sauce from my Baked Ziti over penne pasta - Spaghetti!
Friday' - Mini Chicken Pot Pies. I really liked these, and they were so easy, but I bet I could make them better by using a more traditional Chicken Pot Pie filling. I changed the recipe up a little bit by peeling 1/4 off of each biscuit (the Flaky Layers kind) and using it to top the pies. The Zucchini Tots were also a new one. Very good and easy. The only thing I’d do different is use regular bread crumbs and salt and pepper, instead of the Italian bread crumbs. They were a little *too* flavorful.
Now for this week’s menu…
MONDAY: Fish Tacos. (Not really a recipe, but I kind of explain how we do them in this post.) Brown rice, black, beans, and all the normal taco sides - lettuce, salsa, avocado, sour cream, cheese…
TUESDAY: Grilled Chicken Piccata and salad. I made this recipe once before and it was SO good.
WEDNESDAY: Turkey Meatloaf, mashed potatoes, and green beans. For this I follow the recipe on the back of the Lipton Onion Soup mix box, except I halve it (for 1lb of meat instead of 2), use turkey instead of beef, and substitute 1 bag of cooked Success brown rice (2 cups, I believe) for the breadcrumbs. This is one of James’ favorites and it’s pretty healthy too.
THURSDAY: Leftover Night!
FRIDAY: Personal Pan Pizzas and Caesar salad on the side.
SATURDAY: French Dip Sandwiches, sweet potato fries, and Green Bean Casserole or salad.
SUNDAY: Taco Soup.
No new recipes this week, but all are favorites :)

I LOVE your weekly menu plans! I have a hard time with my work schedule and thanks to your blog and Pintetest......It takes 3/4 the hassle out of meal planning! THANK YOU for sharing!
I love your meal plans! Need to get my act together and do this. Question...do your kids wat what you all are eating? My son rarely does if ever. He is such a picky eater. My husband is always on the low carbs just meat diet. Makes it kinda blah for me to cook. Just was seeing what your thoughts were.

@Whitney - I have no idea why that would be! Check your printer settings and I will try to look back on that link and see if it has anything to do with how it was uploaded. It should print the same as any PDF.
I started weekly menu planning about a year ago, but fell off the bandwagon when our daughter was born in March... You've inspired me to start it up again, it takes so much stress out of the daily dinner grind!!
Totally random...but can you give me a review of your oioi diaper bag?? I love it and am looking into getting one with #2 but wanted to see your pros and cons :) thanks!!
