Grilled Chicken Picatta and Oven Roasted Brussels Sprouts. Have I posted these recipes yet? I can’t even remember, but this meal was a BIG hit in our house.
Knox especially loved the pasta. The chicken was super easy. I used a little bit of basil AND oregano(the recipe says OR), and I added a splash of balsamic vinegar to the marinade (for tenderness and flavor) about an hour before we grilled it. The pasta was a little more work since you make the sauce from scratch, but I think it was worth it. Although next time I’ll do half the amount of capers.
I sold our trampoline right before we moved. So sad :( But we knew our storage space would be limited, and our next back yard will probably be a lot smaller. So we chose to keep the swing set, and I picked up a few I-sold-the-trampoline-while-y’all-were-at-school gifts for the kids… Mommy guilt.
I found this UNDER THE COUCH a few weeks ago while cleaning. It has David Knox written all over it… Fortunately I think it had only been there for a day.
We brought the car seats in to clean and they just thought it was the funnest thing! Don’t let Knox’s face fool you… It’s his life goal to NOT smile when I’m trying to get a picture.
I have a new favorite recipe for Chicken Spaghetti…
It’s Pioneer Woman’s and it looks 12 times better than this pic after it’s baked. It’s so simple, but I did make a few alterations…
- Working with whole chicken grosses me out, so I used boneless skinless chicken breasts. I marinated them with a McCormick’s Southwest packet, then baked at 350 for 35 minutes and shredded. I used 2.5 medium sized breasts and saved the rest for quesadillas the following night.
- Since I baked the chicken, I boiled the noodles in plain salted water, not broth.
- I used 1 can of cream of mushroom and 1 of cream of chicken.
- I only ended up using 1 cup of chicken broth, not 2.
- PW says 1/8-1/4tsp cayenne pepper. I probably used 1/10tsp. It added just a little kick, but wasn’t too spicy for the little ones. In fact, they LOVED it! The Lawry’s adds a great flavor, and I also added salt and pepper.
- I split this recipe in to a medium Corning Ware to bake and an 8”x8” disposable baking dish to freeze. I reserved the final topping of cheese in a ziploc and wrapped it up with the dish in foil. LOVE a good 2-for-1 meal :)
Knox has pretty much given up naps. But every now and then he’ll pass out on the couch :)
I was making fun of myself for packing/moving 257lbs of nursing school books for the 3rd time. (A) They’re all out of date. (B) Everything is done on the computer/iPad now. And (C) A prehistoric BMI calculator??? I’m pretty sure there’s an app for that.
But sure enough - I moved them. Too much $$$ and work has been put in to them for me to just chunk them. They will collect dust on our bookshelves for years to come…
Ok - I think this ties up all the loose ends for February! Looking forward to doing a few posts on how the heck life in a townhouse with 2 little ones is soon…

Haha, I've been unable to part with my nursing text books either, through several moves now. Every move I tell myself they GOTTA GO. Just can't do it ; )
