I've always wanted a GOOD chicken pot pie recipe that doesn't involve me making my own stove-top gravy. So when my friend SheShe posted a super easy looking one on her blog yesterday I knew I wanted to try it. I didn't take any pics, but this is one of Ashley's…
- 1 can crescents
- 1+ cans cream of chicken soup
- 1 can mixed vegetables, drained
- 1 can chicken (or shredded breasts or a rotisserie chicken)
- 1 cup Bisquick
- 1/2 cup milk
- 1 egg
- 1 tbsp. butter
{1} Spray a pie dish (I used a medium sized oblong Corningware) with cooking spray. Line bottom with crescent dough. Press in to bottom and up around sides.
{2} Mix cream of chicken soup, vegetables, and chicken in a bowl. Add pepper to taste, and pour in to baking dish over crescent dough.
*The original recipe calls for just 1 can of cream of chicken soup. SheShe suggested that it needed a little more, so I used 1 and 1/3 cans. I think the final consistency was perfect.
{3} Mix Bisquick, milk, and egg. Pour over top of filling. Bake at 375-400 for 25 min. (I turned it down to 375 mid-way because it seemed to be browning really fast.) Rub butter on to top crust and bake for an extra 5 minutes.
This really is a good, easy week night meal. I used a can of Tyson chicken this time just to keep it simple, but next time I'll probably do it with a few baked chicken breasts or rotisserie meat. I also plan on making it with leftover turkey after Thanksgiving :)

I got Knox this towel at Kohl's forever ago. When we found out H was a girl, they still had them so I got her a girly version. I think this is the first night they've ended up in them together, so we had to break out the camera.
Hadley kept throwing her arms out, saying Tah-Dah!!! and laughing hysterically. We're really trying to teach her that that is NOT funny… ;)

how is canned chicken...is it good? It always freaks me out...I know it's different than chicken in a can...thats a whole different story...
LOL, Ashley@SheShemade and I had this same convo before I made it. We both feel the same way, but she says Costco brand is the best, as far as canned chicken goes... I was just at Kroger so I got white meat Swanson brand. It wasn't awful. (No wierd stuff.) But I think next time I'll just go ahead and bake and shred a few chicken breasts. Just because I'm not a fan of the saltier flavor of the canned stuff and I like big chunks of chicken shreds. If that makes sense...
I totally have the same qualms about canned chicken, but I might have to try it once.
My two year old has that same butterfly towel, and every time she wears it, she does the same thing and yells, "Ma wah!!" 1) I have no idea where she got "ma wah" and 2) it's really hard to tell her that flashing isn't appropriate when you are cracking. up. Glad she's not the only one! :)
I can't wait to make chicken pot pie. It was on my meal plan for the week, but I changed my mind. So now I will make it y'alls way!!
