I've had this account for a while but have just now "got in to it" these past few weeks. It's quite addicting. I feel like it's an organizer for my brain. If you're on - {FOLLOW ME}!
I actually made my first Pinned recipe tonight... {Spinach Lasagna Rolls}
I just did a few things different from the recipe...
- I used 1/2lb browned/drained Turkey Italian Sausage in stead of the chicken. Much tastier in my opinion.
- I used a jar of Prego Fresh Mushroom sauce. My fave go-to sauce.
- Since I was on a healthy kick I used whole wheat noodles. But I'll prob stick to the regular next time, because of course the wheat ones tend to be a bit tougher.
Overall - pretty darn tasty for a healthy dish! (230 calories for each.) My batch made 10 rolls. I baked 6 and froze 4. (Froze separate from the sauce and mozzarella.)

{My sweet soccer camp star on Thursday morning... Before the Strep Monster had reared his ugly head.}
Basically Thursday after swim lessons I noticed Knox getting overly chilled once he got out of the pool, and then again after bathtime that night. Took his temp, and sure enough it was 102.4 :( I freak out over anything above 101 now since he had his little febrile seizure episode back in Dec 2009. So we took him in to the minor med ASAP.
Well after a few tests we found out it was Strep. Makes sense because one of his little friends who we hung out with on Wednesday had also come down with Strep on the same day. We got out of there around 10pm and were able to find a 24hr pharmacy so we could get his first antibiotic dose in him before bed.
This morning (Friday) was kind of rough...
He woke up with all the Strep symptoms - high fever, vomiting, sore throat... Ugh! Poor guy was miserable and I could not get his fever to break. Plus, since it first spiked the night before he'd had 3 little "fainting spells" where he'd kind of blank out, fall-back, and come to after few seconds. In light of his seizure past, I was concerned and went ahead and took him in to our regular pediatrician just for my own piece of mind.

We saw the nurse practitioner and she confirmed my suspicion that his little "spells" (he had one while we were there) looked like mini febrile seizures. UGH!
Well if you say fever+vomiting+seizures to a Mommy/Nurse she won't be able to stop her mind from going crazy and in to the worst-possible-scenrio... Febrile or not. No chances... I wanted the NP to rule-out meningitis. (I test him for it with every fever. I'm telling you - being Mommy/Nurse can be torture.) She did the whole series of tests [with a sane and objective outlook] and obviously said as of yet, we were OK and to just keep watching him...
{Watched a lot of movies and read a lot of books today. He rediscovered his LeapFrog Tag system and has a new found love/understanding for it. Plus.}
Thankfully, as of this evening - the 24 hour mark - Knox felt MUCH better! Like his old silly little self... Puts my mind and heart at ease but I'm still having him sleep on the blow-up mattress in our room for one more night.
This and the couch are where he's kind of hung out all day. While poor Hadley was limited to the playpen and highchair as I try to gather all the toys/sippys to decontaminate and wash all the linens. (PS - Why is it that when your kid gets sick in your bed they manage to hit EVERY piece of bedding??? EVERY time.)
It breaks my heart to see my baby boy sick! To date - this is the first time he's ever had anything besides a stomach virus or ear infection. NO fun. I'm such a softy - he was babied all day long. I snuck out to Target this evening when he started feeling better and brought him back a little Sick Day Surprise...
The surprise was a big hit! He watched TMNT a good 2 or 3 times. I think I started something...
Let's hope that tomorrow's a better day for us and ABOVE ALL THINGS - we can keep Hadley well! I've become the sanitizer nazi around here and am going to finish Cloroxing everything tomorrow.

Awww... poor little guy. I'm pregnant with our first (a boy!), so I feel like reading your blog gives me a good preview of life the next few years. Hope Knox feels better soon!
Oh what an awful day! Our daughter is two and a half and just had strep two weeks ago. I was relieved it was strep - I hate hearing "virus" when they're running a fever. For her though, the rapid strep test came back neg, so we missed a day of antibiotics until the overnight labs came back. She also had strep at 20 mos and both times the dr thought it was unlikely to be strep bc of her age, but tested her anyway. I would totally be testing for meningitis, too - so scary! I have a love hate relationship with my healthcare knowledge!!
Total understand crazy nurse mommy mode. I was tough as nails when I worked as an rn, then I had kids! I can't handle their puke or bloody lips. My husband always has to tell me to hold it together for my babies. Of course, as soon as they have symptoms, I'm googling everything! Prayers for a healthy Knox and Hadley :)
