Tuesday's List : Crock Pot Recipes

 


{1} Roast Beef



2-3lb cut of roast
1 can cream of mushroom soup
1 packet of Lipton Onion Soup mix
red potatoes, chopped to 1" pieces
baby carrots
1 large yellow onion, chopped

Spray crock pot with oil and place roast in. Top with remaining ingredients. Cook on low for 6-8 hours.


This is THE best roast recipe. It's so flavorful and tender and you can eat on it for days. The soups and juices combine to make a great gravy as well.

{2} Beef Tips



2lb beef sirloin tips, cut in to 1" pieces
8oz baby portobello mushrooms, sliced
1 can cream of mushroom soup
1/2 cup dry red wine
1 envelope Lipton Onion Soup mix
1/8 tsp pepper

Stir together beef tips and remaining ingredients in a lightly greased 5qt crock pot. Cover and cook on low for 6 hours, or until done, stirring occasionally. Serve over buttered brown rice.


LOVE this recipe! I grew up eating a stove-top version of beef tips, so when I found this recipe a few years ago I was thrilled. It's MUCH easier and I think tastes even better.

{3} Memphis Barbeque



It wasn't until I moved to Texas that I realized that the word "barbeque" didn't exclusively apply to pulled pork on a bun slathered with sauce and topped with cole slaw. Growing up in Memphis that's all I ever knew, and man do I miss it!

On the way home from our most recent trip to TN James and I were discussing how we should cook up a pork shoulder and freeze it in batches so we can indulge anytime we want :) I've made it before in the crock-pot but wasn't crazy about the turn-out. (Actually I was 8 weeks pregnant and the smell of it cooking hit me so wrong that I ended up setting the crock pot out on the back porch. Needless to say, that recipe is kind of ruined for me now.) So I'm thinking of trying this route next time...

3lb pork shoulder, remove skin and excess fat
1/2 cup chicken broth
barbecue sauce (ahem, Corky's)

Place shoulder in crock pot and top with broth. Cook on low for 8 hours until very tender, occassionally spooning broth over meat to keep tender.

When done, remove from heat and let stand until cool enough to handle. Tear meat in to thin shreds, removing fat and gristle. Skim and remove excess fat from broth.

Return pulled pork to slow cooker and stir in barbecue sauce. Cook for 1 hour on low. Serve on buns with cole slaw.


I'll have to let y'all know how this one turns out :)

{4} Steel Cut Oats



This is something I do every now and then. We love steel cut oats so I usually do a big batch and refridgerate it so we can eat on it all week.

Combine oats and water in lightly greased crock pot according to directions. (Usually 2 cups of oats to 4 cups of water, and a little salt) Cook all night (8 hours) on low. It works out best if you can stir it a little in between. (If you're like me you're up AT LEAST once every night to use the bathroom, feed a baby, take water to your 2 year old... Whatever.)

Stir in anything you like... brown sugar and cinnamon, pecans, sugar, honey, etc. My favorite is the Cranberry-Cherry Pecan salad toppers you can buy in the stores with a little sugar. Yummy.

I am a new follower and I am excited to try the crockpot recipes..I have to admit that I have been a little hesitant to using my crockpot but your recipes seem pretty easy and very yummy!!

I'm not sure how I found your blog exactly but I have been following for a little while. I am excited to try the crockpot recipes. I am always looking for new quick and easy ideas for dinner. I tried your enchilada recipe and fajita recipe and they were both good.

I don't have a crockpot recipe to share but I did just post a tortilla soup recipe on my blog that is pretty easy and really good.
